This article by Greg Oates does an outstanding job of highlighting how culinary travel is evolving from a niche market to an industry-type market comprised of its own niche market segments.

The article also highlights how culinary travel is similar to how adventure travel was 15 years ago, in the sense that it started out as a rather homogeneous market before eventually segmenting out into many different types and forms of adventure travel.
